Have you tried rebooting your Nest Mini either from within the Google Home app or by unplugging it for a minute?
Can you temporarily put your Nest Mini in a different location closer to a Wi-Fi access point just to determine whether the cause is a weak Wi-Fi signal in its current location?

In addition, it would help a lot if you could do a sequential reboot, refreshing all connections. Unplug the power cord of your router/modem followed by your Nest Mini and all other devices. Restarting your phone might also help.
