Hello,
I have a device called “Plug 1” in my “Linked To You” but I no longer have the device. When I try to “unlink” the device the system doesn’t come up as active and won’t unlink. Is there a way to remove this? I’ve deleted and redownload the app and signed out and signed back in. Nothing really works.

That certainly hasn't been easy for you — let's sort this out.
Try assigning your plug to a room once done, check if you have an option to remove it. If the issue persists, create a new home structure and move your active devices there.
