I recently got some nest devices to add to my old google devices. I got the basic Nest Aware subscription going.
I found the Sound Detection settings under Subscription-Nest Aware and set it up.
After completing that setup, picking the sounds and my device, my Google Home Mini, the Sound Detection menu has disappeared entirely.

You have to be logged onto this forum (by clicking on the blue profile in the upper right corner) BEFORE you click on the REPLY button in order to get the CAMERA icon on the REPLY window, as shown in the screen shots below.
If you go to one of your 2nd gen cameras or doorbells in the Google Home app, and go to Settings | Notifications, do you have "Heard" options for "Carbon monoxide alarm" and "Smoke alarm", as shown in the screen shot below?

Yes, curiously after you pointed out where to look, I was able to find those settings on my Nest indoor wired camera. They were off, I turned them on.
However, the sound detection menu under Nest Aware is still missing. When I set it up initially I used my old Google Home Mini, from 2019, called "Bedroom Speaker". I do not see the sound detection settings under Devices-Bedroom Speaker-Settings.

I think this is the menu option you're talking about, but I think it only applies to 2nd gen cameras and doorbells:

Right, and it appeared once and let me setup, then it disappeared forever from that menu that you just showed the screenshot of. Maybe because I picked a invalid device when I did it? It *let* me pick Bedroom Speaker! (the 2019 Home Mini)
That's the two new cameras I have installed in my Google "Home".
I'm positive I've got a bug here.
Sound Detection is supposed to be a feature for Nest Aware basic, not just Nest Aware Plus, right?

I would think "Sound detection" would be available on both Nest Aware and Nest Aware Plus subscriptions. And you said that you do have "Carbon monoxide alarm" and "Smoke alarm" options for your 2nd gen camera, so the capability is there; it's just that the menu option under Settings | Subscriptions | Nest Aware disappeared. I have no idea why that would happen. Maybe, as you said, it happened because you picked an invalid device.
