@RXShorty's link is from 2017. In 2019, due to privacy concerns, Google Nest removed the ability to turn off the status light on its cameras:

In 2019 Google Nest said: "You will be able to dim the light on your camera, but it will always be on when the camera is on. We're doing this to make sure you, and those around your camera, are aware when the camera is on and recording."
On all Google Nest cameras, you CAN set the status light's brightness to Low, High, or Auto.
