Colour lost from camera

One of 5 cameras no longer transmitting in colour

Do you by any chance have "Night Vision" under Settings | Video set to "Always on" in the Google Home app for that camera?  If it's set to "Auto", you could always try toggling it to "Off" and then back to "Auto".  We had to do that with one of our cameras a few years ago.
