Limit which hub to ring with nest doorbell

When the new nest doorbell (battery) rings, all Google home hub and home minis ring but not at the same time...I want to limit to only the nest hub or possible one other home mini but can't work out how. I've set them up as a speaker group but cannot see a way of choosing which ones to use when the doorbells ring. 

 
There is also a massive delay between doorbell press and announcement.

Sorry for my late response. Thank you for all of your patience while waiting for a reply. I just wanted to make sure that your issue is addressed. Any device/speaker that has Google Assistant enabled, will generally work as a speaker to announce for the Doorbell. You will need to check the settings for each device in the app, and set up which ones you do not want to use as a speaker for the doorbell.
