With the latest update to the Google Home App and camera firmware, there are some performance issues I have found.
1) Google Nest Cam (wired) (latest version): Had been working perfectly. Now, however, when-ever any neighbours lights turn on or a car with headlights goes by I seem to get a Person Seen notification. Somehow the algorithm for identifying people seems to have been messed up. It was working perfectly previously at all lighting levels.
2) In the Google Home App, on iOS, there is a bug in the Notifications setup. Toggling Notifications on or off from the Events Seen screen will not translate to Notifications on or off on the Notifications screen. Detail: If you select a camera (say Google Nest Cam (wired)), and in the "..." at the top, you go to Settings, and then select Notifications, under "Seen" you can select, for example, "People" and toggle it on and off. Alternatively, from Settings, you can go to Events, and click on Seen Events, and for "People", you can toggle on/off whether people seen events are captured, and separately whether notifications should be sent for people seen events. The issue is, that if under Settings, Notifications, you select to get Notifications for People seen, and then go to Seen Events, and turn off the toggle for getting Notifications for People, if you go back to the Notifications screen you will see that the Notifications for People Seen is still turned on. Similarly, if Notifications for People seen are turned off, if under Settings, Seen Event, you turn on Notifications for People, and then go back to the Settings Notification screen they will not be turned on.

I just tried what you reported under #2, and am NOT seeing this behavior. If I turn notifications on or off under Settings | Events | Seen events, that changed setting shows under Settings | Notifications, and vice versa. This is on our plugged-in 2nd gen battery camera and on our 2nd gen Google Nest Indoor Camera.
I'm on version 3.28.104 (iOS), and am NOT on the beta "Public Preview" version.

Re your comment about the item 2 issue:
I am using an iPhone SE (3rd gen ( latest version)) with iOS 18.3, and the 3.28.104 version of the Google Home App for iOS.
With the Nest Cam (wired indoor) (latest version from Google):
Under Settings, I have Push Notifications toggled On and Away Only Notifications toggled off. Under Seen, I have only People toggled on.
If I click on the "event settings" from the Notifications screen, I go to the Events screen, where I am showing: "people, animals". If I click on that, I go to the "Seen events" screen. Scrolling down on that screen to the event history area, I have People toggled on and Your Notifications toggled on (for people). I also have Animals toggled on but no notifications for that. (Also on the "Seen events" screen, I have no activity zones defined and I have familiar face detection toggled off.
If on that "Seen Events" screen, I toggle off the "Your notifications" for People, and then go Back (at the top) to Events and Back (at the top) to Notifications, the Notifications screen is still showing Notifications for People toggled on.
If on that Notifications screen I toggle People to off, and then go to "event settings", and then "Seen events", Notifications for People is turned off (as it should be).
So for me, it clearly is such that toggling the Notifications for People (for example) on or off on the "Seen events" screen, does not change their setting on the "Notifications" screen. (But toggling the Notifications for People (for example) on or off on the "Notifications" screen does change their setting on the "Seen events" screen, as it should.)
I confirmed that the same issue also applies for my older Nest Cam indoor wired.
Another puzzle piece for the bug repair:
If I toggle On the Notifications for People from the "Events seen" screen, and go Back (at the top) to Events and go Back (at the top) to Notifications, it is not showing Notifications for People toggled on, but if go Back (at the top) to the main Settings screen, and select Notifications there, the Notifications screen comes up with Notifications for People turned on (as it should be). Or, if from the Notifications screen, I minimize and then re-select the Google Home App, or lock and unlock the phone, the Notifications for People on the Notifications screen shows updated as selected from the "Events seen" screen. Somehow the information is not translating for that selection to auto-update the selection indications on the "Notifications" screen when it is made from the "Events seen" screen. That should be fixed.

I was merely reporting that I simply cannot duplicate the behavior you are seeing. In my case, changes in notification settings carry over correctly between Settings | Events | Seen events and Settings | Notifications. I am on an iPhone XR on iOS 18.3.
I cannot explain why you're seeing the behavior you are seeing.

In Google Home App Settings for a given camera:
Toggling the Notifications for People on or off from the "Seen events" screen, should be reflected when you go Back twice (at the top left) on the "Notifications" screen. See screen prints below.
Seen Events Screen (where I toggle off the Notifications for People)
That should be then reflected when you go Back twice to the "Notifications" screen (but it is not):

I agree that the behavior you are showing in your screen captures should NOT be occurring.
I am merely reporting that on our two cameras, I am NOT seeing that same behavior.
