I recently purchased and installed the Nest Doorbell Wired (1st gen). There is no Talk and Listen option in settings through the nest app to enable or disable the tone. Is this an option I should have, has it been removed or has it never been available on the wired doorbells?

Ah, I see what you mean. Our 3 Nest Hello doorbells do NOT have a "Talk and Listen tone" option and do NOT play a chime when "Talk" is selected. ONLY our cameras have that option. I don't know why the documentation refers to cameras and doorbells.

Talk and Listen on the Dropcam and the Nest Cam Indoor and Outdoor work one way at a time, like a walkie talkie. You need to take turns talking and listening.
Unlike the Dropcam and the standard Nest Cams, Talk and Listen on the IQ cameras, Nest Cam (battery), and Nest doorbells work like a video call. You can speak through the camera and receive audio from it at the same time. They do not have a chime tone when you talk.
While talking through these Nest Cams, audio won’t be recorded and you won’t hear anything when browsing their video history. The camera can’t use both the microphone and speaker at the same time.

We've had Google Nest Hello Doorbells for over three years. There is a "Talk" option available by tapping the microphone icon:
