That's under your control.

You can turn off "Email" notifications for each of your cameras and doorbells in the Google Nest app, under Settings | Notifications | Notification type. (We never use email notifications.)

Or you can turn off notifications for the events for which you do NOT want to receive notifications, under Settings | Notifications in the Google Nest app.

Your post lists the Nest Doorbell (wired Gen 2), but I'm not aware of any email notifications for camera or doorbell alerts in the Google Home app, though customers keep asking for them.

I still am receiving many many emails from my Nest Doorbell cam. This really needs to stop.

If you do NOT want to receive email notifications for your doorbell, you can turn off "Email" notifications in the Google Nest app, under Settings | Notifications | Notification type.

If there are events for which you do NOT want to receive email notifications, then turn those off, under Settings | Notifications in the Google Nest app.
