So, Google says
"Use the Nest app on a computer
We optimized the computer version of the Nest app to take advantage of your bigger screen and mouse."

However, I am really struggling to see where this "optimization" is happening. I have 8 cameras. They show up in 2 columns, so 4 cameras per column. If i maximize my browser (fill the whole monitor) and zoom to where I can see all 8 cameras, I have two narrow columns in the middle and a bunch of blue space on each side. Instead, the cameras should reorder to fill in the space, for example 4 columns and 2 rows, or 3 columns, or whatever. The design could not be LESS optimized.

I have 4 cameras and some other things and I can see what you mean about that blue space. I can imagine 8 cameras being in narrow columns with the extra space on the sides. Not ideal for sure.
We are primarily a user to user community and while the Nest team looks in hear and reads comments I would suggest sending some feedback directly. You can do that from the Google Home app.

I hadn't seen this page claiming to have "optimized the computer version of the Nest app to take advantage of your bigger screen", but your observation is correct. My computer monitor could easily accommodate 4 columns of camera feeds but displays only 2.

I am afraid what you are asking for is not entirely an option at this time. You can try to view them on your phone app, or with the current amount of camera views available to you. I apologize for the inconvenience. If you have feedback, or a feature request, please send that through your app by pressing the + in the top right hand corner of the Google Home App, or via feedback in the Nest app.
