Using my android phone, Verizon Jet Pack for mobile hotspot, and a Google Nest phone as a backup camera when I hook up the truck to the 5th wheel.
Provides great video. Only problem is it flips the orientation. On the phone's screen what appears on the left is actually on the right. I'm dislexic enough, how do I adjust the orientation?

Well, it's not flipping the orientation. It's just NOT mirroring the view the way car backup cameras do, making what we see on our backup camera match the view in our rear-view mirror. The result is pretty disconcerting.
Many Google Nest cameras give us the ability to flip the video 180 degrees upside down so they can be mounted under an overhang or at an odd angle: https://support.google.com/googlenest/answer/9219187?hl=en But that doesn't help you.
Most webcam built into computers or laptops have an option to "mirror" the view, but I've never seen that option for Google Nest cameras in the Google Home app or Google Nest app. Maybe there's some option in the operating system on one of your phones to mirror the view on the phone.
