Do you have the Nest Thermostat setup in the Google Home app? If so, it has no dial and that's not how it can be controlled.

We have a standard nest thermostat. If we need to do any manual change a temperature or turn on the fan , right on the thermostat. And it's very hard to turn. Any suggestions

Which model of thermostat specifically? You can follow the link I shared above to get the exact name of the model. That's important as not all models have a dial you can turn.
