I have added a nest thermostat to my google home for my short term rental because when I was setting it up, it led me there...made me "convert" account to google home. I want to be able to allow the user at the thermostat to manually control 100% of the time, while occupied. When guest checks out, I can go in and set it to eco and it will hold indefinitely. First question would be why in the world would they not allow you to hold all of the presets for an indefinite amount of timen and only the Eco. Secondly, I cannot figure out how to allow guest to manually control at the thermostat....I've read that I can do that from the Nest app, but my thermostat is not in Nest app because it made me "convert" or set up in google home and not nest app.

You're right, it can be confusing that Google Nest thermostats are now managed through Google Home instead of the dedicated Nest app. Here's how to address your concerns:
Indefinite Preset Hold:
Unfortunately, Google Home doesn't currently allow holding any preset (including Eco) for an indefinite amount of time. The Eco mode itself is designed for long-term energy savings when the house is unoccupied, which might be why it has a hold option.
Guest Manual Control:
There isn't a direct way for guests to completely bypass smart features and have full manual control at the thermostat itself. However, you can achieve a similar effect through Google Home:
Create a Schedule: Set up a schedule in Google Home that maintains a comfortable temperature range throughout the day and night for guest occupancy. This way, they won't need to make frequent adjustments.
Remote Access: Guests can use the Google Home app (if you provide temporary access) to make minor adjustments within the set temperature range if needed.
Temperature Lock (Optional): While not ideal, you can explore the "Temperature Lock" feature in Google Home. This allows setting a minimum and maximum temperature range that the thermostat can't go beyond, even if guests try to adjust it manually. However, it restricts their flexibility a bit.
