Nest thermostat

Can i use one thermostat with one two zone heating? Be able to control each zone separately

You mean 2 zones, not 2 stage, correct? For example, a thermostat downstairs for heating zone 1 and upstairs for heating zone 2? In a multi-zone setup like that you will need one Nest thermostat per zone.
