moved into a house with a Nest Thermostat. Should we clear everything and start from the beginning? How do we start from the beginning?

You should also verify that the previous owner or resident has removed the thermostat from their Google account in the Google Home app, as specified in this link, or you may get a "connected to another account" error message when trying to install it on your account and will be unable to continue:
