This eco mode is horrible. This should be simple on or off. I don't understand why I can't turn this off. Don't give me "it's under the settings menu" because it's not there, no home away mode, no eco adjust, nothing. Seriously let me just control the temp in my own house without it turning on some crappy eco mode so now my house is 90 degrees.
Using Boolean logic is this possible to turn off

Your options for this depend on the model of thermostat you have.
Nest Thermostat (2020)
Hold the temperature on the Nest Thermostat - Google Nest Help
Nest Thermostat E and Nest Learning Thermostat
If you also want to stop it adjusting based on home/away assist and the auto-schedule features, select the settings icon in the upper right and turn off the Home/Away Assist and Auto-Schedule options.

Look at this time line of pictures. Did everything you said. Once your in eco mode and change it kicks out of eco mode and goes to nothing and the cycle starts over and over.

@Thll , let’s try to get your Nest Thermostat back to basic mode. Using your Nest App, go into settings and turn off:
Home/Away
Auto-Schedule
Early On
True Radiant
Cool to Dry
Sun Block
Airwave.
Set your ECO and Safety Temperatures to their defaults.
after that set your system mode (Heat or Cool) then choose your desired temperature set point. Let it run for 24 hours and see if it changes it’s operation.

@Thll , your schedule is not being used correctly. You are using a combined Heat and Cool schedule where on Sunday morning at 1:00am you set the heat to 68 and the cool to 70. Then at 5:00am you increase the heat by 2 degrees and the cool by 2 degrees only to lower by 2 degree again at 8:00am. Then you have a duplicate entry at 9:00am. That is very makes no sense because you’re not making any changes in the heat or the cooling set point so there no need or value to have the 9:00 the same as the 8:00am.
Your schedule should only have entries at the day and time you need to change the temperature set points from the current running set points. So let’s say the Monday morning about the time I would like to have the house be 5 degrees warmer. This would only need to be the Heat, since it gets cool overnight. So I set a 5:00am Heat set point of 68 degrees. Since the Sunday overnight set point was 64 degrees. Now I leave the house at 7:00 am so I make an entry of Heat 65 degrees and Cooling 80 degrees. I return home around 6:00pm and so make an entry for Heat 70 degrees and cooling 78 degrees. The last entry for the day is bedtime. And, there is an entry at 10:00pm to drop the heat temperature to 65 degrees. Now, if you live in location like Arizona then you would not need and heat set point changes, you would just be change in the cooling set points.
Again, you only need an entry for time of the day you want to change the temperature set point.

Bro this whole product doesn't work correctly. You can't even tell me how to turn off let alone adjust eco mode.

The ECO mode is only activated by you or the Home and Away feature. If you set your system mode to Cool, and your home and away feature is OFF. The ECO mode will not engage. I know this to be the fact since this is how my Nest in my home is set up and how it operates.

I turned off the Home and Away feature using the Nest App. I open the Nest app, I select the my thermostat and then tap the settings gear in the upper right corner. From there scroll down to Home and Away, change it to OFF.

I do not recognize your screen, that is not the Nest App, perhaps you are using Google Home app?

Guess what the 25$ thermostat actually works! How smart is that! Toss your crap nest product in the trash.
"Smart" products, what a joke. If I want the temperature changed in my house I'll just press the simple button on the simple thermostat. Google needs to adopt Kiss method instead of "smart"
