I've sorted through most of the posts where the Nest thermostat version 3 is not following the schedule. I can't seem to stop it from cooling at 72 degrees, even though the schedule is a simple Cool at 78 degrees, every day.
I've read the post that suggests I change the mode from Cool - to Heat and Cool...but that makes no sense. The thermostat has been following the schedule forever. Heat pump is 5 years old, cools well when needed.
What has changed that is telling nest to initiate a unrequested cooling temperature of 72 degrees in the middle of the night, and what do I do the get Nest to follow the program?

What has changed is Nest Renew has recently been released and it is changing temps/turning AC on/off based on when NEST determines your local power mix is cleaner/dirtier.
I had similar experience/history as you, but recently I turned off all scheduling through NEST and went to Google Home Automations to manage my AC based on my local on/off peak rates (higher/lower).
From another response/thread, but this is the third night I have caught Nest turning off my AC at night even though I have all the functions turned off, as you noted.
"The new Nest "Peak Time" function activated twice last night and turned off my pre-cooling, which is quite annoying. It shows up in the activity log for GHA if one is not watching NEST 24/7 while sleeping to see "Peak Time until ##.## [time]""

@billnye427, thanks for reaching out here in the Community. To confirm, do you have a Nest Renew subscription? Do you have a routine set up from your Google Home app? If so, try checking for Nest Thermostat actions and remove or edit it when needed. Hit this link for more information.
