I have a pi-hole that I use as a DNS server. I love it on all devices but a streaming TV device, Peacock Flex. Can I give the Flex device another DNS server address inside the Google Nest and have everything else go to my pi-hole.

There really isn't an easy way to do this, unless the Peacock Flex device supports manually configuring the DNS server instead of using the one it receives via DHCP. If it supports that, you could point it directly at an internet DNS server, bypassing your local DNS servers. But, if it doesn't support that, I don't think there's a reliable way to accomplish this.
