I don’t know if I totally understand what’s possible and what’s not when it comes to having more than one network with Google WiFi. Is it possible to have a network for say ‘home’ stuff and another network for my ‘work’ stuff?

Possibly, though with some restrictions. Google/Nest WiFi supports a main network name + password and also supports a secondary "guest" network that has its own name + password. You could think about setting up that "guest" network and using it for your "work" stuff, which should keep things separate but still allow everything access to the internet.
