I'm having Wifi issues with my security cameras and the vendor says I need to move the base station/cameras from Channel 6 to Channel 11. I can't find/figure out how to do this.

Those are 2.4GHz channel numbers. Google/Nest WiFi units automatically select 2.4GHz channels based on what they see being used the least in the vicinity. If you have multiple Google/Nest WiFi units, they may select different channels (my three-node Google WiFi system is using two different 2.4GHz channels, for example). It is not possible to override this behavior. But, your 2.4GHz cameras should work properly with any 2.4GHz channel.

Michael - I am having similar issues that I hope you can help with. I upgraded my old nighthawk modem/router to a Google Nest Wifi router with 2 additional points. I have the nighthawk in bridge mode. The Google Router and the points are each rated for more square footage than my old router, so coverage should not be an issue. Now, every day my Nest outdoor camera will go offline/lose service for an extended period of time. When this happens everything else on the wifi network is running just fine. When I check the google home app it says mesh connection good and internet blazing fast. My outdoor camera seems to be losing signal because the wifi is keeping it on 5ghz even if the signal is very weak, and when it loses signal it still says 5ghz. Is there a way to set my Nest outdoor camera to permanently be on 2.4ghz? I tried connecting it to a guest network but that did not do the trick.
Devices losing signal and going offline has increased substantially since I "upgraded" my wifi - for example my streaming service will sometimes buffer now and it is very close to a point that has a strong signal. But the most common is the outdoor nest camera. Any advice would be appreciated!

My brother in-law is having a similar issue with his Epson printer. The vendor has also advised him to change the channel to 11 but cannot find this on the google nest wifi settings.
Would be really handy if this option was visible and editable to change just like on every other wifi router that is out there.

As @MichaelP said earlier, it's not possible with the Nest WiFi settings to manually select channels. The WiFi network will automatically assign channels based on performance. If a device requires a specific channel, it's not something we're able to manually select.
Sorry for the frustration with this. I know that doesn't resolve the issue, but I'll pass feedback along to our internal teams that this feature is something our users have indicated would be useful.

Thank you for your reply. Yes I am aware that this setting cannot be altered and I know that Google tries to make this a user friendly product, however I believe that there should be an advance option that allows the more savvy users to make changes to fix issues like the one my brother-in-law is facing.
He has spent a lot of money on Google Wifi and Google Nest WiFi products and it would be a real shame that he would have to move away from them just because a simple setting like allowing to change the wifi channel is not available.
I really appreciate you passing on this feedback to your internal teams and hoping that future updates will add this option to the advance wifi settings.

If the team do enable this suggestion and this case is closed how will we be notified? I would prefer to keep this opened until we have a yes or no answer from the team regarding this suggestion if it is something they will allow.

The good news is that if any product features are added to your hardware or the Home app is that the update will automatically be downloaded and installed for you. You won't need to do anything to enable the update. For notification of new features, we announce those through a different venue than the forums, typically in a blog post or through update notes in the Play Store.
