Set up nest WiFi router and 1 point. I say hey google and it tells me something is not right to try to troubleshoot in app or unplug. I have tried both. I am not sure if I even have this set up correctly either.

Did you get the wifi working via the new setup? Only the point also acts as a Nest speaker so I assume you're talking about that. What does your setup look like in the Wifi section of the Google Home app?

I had to go into my Google assistant settings on my phone and retrain my assistant to recognize my voice after installing my nest system. Otherwise it wouldn't recognize me. I also found a setting in the nest app that allowed me to grant it permission to "hear" my family members and guests without having to train their voice models into the settings. Maybe look into these options to rectify the error message and problem.

I’m not sure what you mean about new set up and what it looks like. It says I’m connected but the router that hooks up to my Hughes network is not connected

It doesn't sound like you've connected your Nest wifi router up to your ISP's modem correctly, so your router/point don't have an internet connection. Do you have someone you can reach out to that can give you a hand with the setup?
