SET-UP:
THE SHORT - I am looking for why I can't see the 5 GHz channel and how to fix it!
THE LONG - I understand that Google broadcasts a single SSID for both the 2.4 & 5 GHz bands. But unfortunately, there isn't a way to segment the two bands into their separate SSIDs.
I've used both the Apple Wireless Diagnostic Tool and NetSpot to scan my available WiFi networks and see a number of them, both in and out of my home. For example, I can see my Google WiFi network and my FIOS wireless router with both tools.
I can see both 2.4 & 5 GHz channels on my FIOS router, but I only see the 2.4 GHz channel for the Google WiFi router. Unfortunately, the FIOS router doesn't cover my home the way I need it, which is why I installed the Google WiFi system.
I can connect to both channels of my FIOS router without trouble and run speed tests that confirm the connection is better based on the one I choose.
I found a link that would allow me to select the 5 GHz channel on my laptop manually, but this would not work for all of my devices AND doesn't explain why it only allows me to connect to the 2.5 GHz channel.
I need better throughput than what I am getting with 2.4 GHz but see no way to fix the issue.

wstites, if you connect to the Google Wifi network using your mobile phone, which frequency does it use when the mobile phone is close to the Google Wifi point? Does it change between points and even the Google Wifi primary?
