Google Nest/Assistant Can't edit lists

I've seen many issues about this but with no 'real' resolution. I use google workspace and just started replacing Alexa with nest hubs. I can (by voice) create lists, show lists, see contents of lists, but when I try to add items to the list I get a generic "something went wrong" response (On Mini's, Display, and Phone). I have Keep selected as the "Notes and Lists" handler. From what I can tell all permissions are setup accordingly. I'm at a loss.

• Could you please let me know in which country you are located?

In the meantime, I recommend you double-check if the "personalization" mode is enabled; please follow these steps:

1. On your phone or tablet, open the Google Home app.
2. At the bottom, tap Home, then select “Settings” (the gear icon).
3. Under “Features,” tap “Google Assistant,” then select “Personal results.”.
4. Edit settings.

Then you can create or edit your list, saying, for example, “Hey Google, “start a list.”.

You can use Google Assistant commands or list options to edit. For example:

• Say a command like "Hey Google, add Take out the trash to my To Do list."
• On your phone, ask Google Assistant to show you your list. Then, tap a list or See all lists.

*Since I setup my new "Home" devices. I'm switching off of Alexa

What mobile device are you using to set up your devices?

*My Phone (Samsung S22 Ultra)

How many Google Mini speakers do you have?

*2 (And 2 Speakers)
How many Nest Hubs do you have?

*2
Is your Google Home app up to date?

*Yes
Could you kindly confirm that the Google account you've linked to your Google Home app is the same one you've linked to your devices?
*I only have one
Could you please let me know in which country you are located?

*USA

I can create lists all I want, but I can't add from any of my devices. "Hey Google, Add tomatoes to my Shopping List" Gets an error. "Something went wrong trying to change your list"....
