I have multiple Nest Displays on my account. All are in English except this Nest Hub 2nd gen that is in Spanish. But even so, not all menu sections are in Spanish, some are English, some Spanish. I'd attach a photo if I could.
I crawled through the menus and Google did not do the decent thing of adding "Device Language" option.
Rebooting the device or master resetting (with volume buttons) did not fix anything.
My Google assistant does not support Spanish and I bought the device in Romania so it makes no sense to have the device in Spanish and not being able to change it. The Google home address is in Romania, 2500km from the nearest Spanish speaking country.
I searched this community and found one post that mentions casting a video in English, did that, didn't work.
Another answer mentions some really voodoo garbage like removing languages from the phone, rebooting the device, reinstalling the Google Home app... that messes up too many things to try to do it.
Question: How can I change the language of this device to English
Suggestion: Google, let's face it, you're not Apple, you haven't been hiring smart people for quite a while now. Your engineers write bad code full of bugs. Stop making things "automatic only" and always provide an override to the users so they can fix your mistakes. Allowing a user to change the language of the device from the menus is the decent thing to do. Do it!

valur, checking back in if the suggested given above help. The language and region set on your phone and Google Account can also affect the language on your Nest Hub. Note: By default, the language is set based on your region.
You can also try adding a secondary language using these steps:
