I have somes hub, hub max, google nest mini (as well as smart lighting and plug).
My grandmother of 88 years old loves using google assistant but it answers her to fast sometimes when asking questions for her to properly understand.
Does it have a way to slow down the speed such as on YouTube when I slow her down at 0,75x??

I appreciate you sharing your experience using Google Home/Nest speakers and I'm glad that your grandmother enjoys using it. To answer your question, right now, there are no particular settings to when we can slow down the speed of the Google Assistant from answering.
As of the moment, the only settings available relating to your questions is to change the voice of your Google Assistant. You might want to check that option so you can compare what voice best fit to your Grandma's liking as well as its phase.
Open the Google Home app .

I did try to change the voice from French Canada to French France.
But it didn't change anything since the issues is the speed of the talking of the assistant.
For example under Chromecast/setting/system/accessibility/text to speech/speech rate
we have the possibility to choose the speed at which the text is spoken.
So I told myself that if Google were able to create that setting for awesome feature that grandma use maybe it was also available for the assistant to.
I have 30 + device in my home and the assistant understand her command if she forces herself to speak faster then her usual but if the assistant asks her a question, it is to fast for her to understand.
I am asking again.
Can we adjust the speed rate of the assistant?
