It doesn't need to be turned off. It can be pulled off, just pull straight out. You'll see that it has a couple of ports that it connects with. There's a page with manuals here: https://support.google.com/googlenest/answer/9373007?hl=en

That I can answer! Pull the thermostat (the round part) off the base. It can be pulled off and put back on quite easily. If you look on the back of the round unit, there's a teeny-tiny QR code printed there.

I have a Nest E and I can't control it with Google Home, I have to use the Nest app. Maybe try that?
