Thanks for the post. I'm sorry you are having this issue. I know its frustrating when Google Assistant doesn't seem to do what we'd like for it to. However, let me shed some light on this subject. I think I can be of some help here.
First off, Foxtel Go is not an app that is supported by Google Assistant. I believe that;s why your Nest Hub wasn't able to pull it up when you asked.
It does look like you'd be able to cast your stream from the Foxtel Go app to your Nest Hub however. This article can explain a bit more on how you can do that.
