Sorry for the late response, but I wanted to hop in here to help. I understand this can be confusing, but I'm happy to look into this for you.
I was able to find these steps on how to remove someone.
Open the Google Home app .
At the top right, tap your account.
Verify that the Google Account shown is the one linked to your speaker or display. To switch accounts, tap another account or Add another account.
Go back to the home screen, then tap Settings .
Scroll down to 'Services', then tap Notes and lists. Note: If asked, choose an app to open your list.
To view your lists, next to 'My shopping list', tap Menu .
Tap the shared list share button .
Tap the X next to the person that you want to remove from the shared list. You'll see a confirmation that they've been removed.
