On our three 1st gen Google Nest Hello Doorbells, the "Doorbell themes" option has only been available when Google Nest turns it on when it is close to a holiday. Google Nest does not document which holidays have holiday themes.
"Seasonal doorbell themes are available for your doorbell around the holidays. The app lets you know when a seasonal doorbell theme is available."
