I have the Nest Cam wireless. It won't record events when the app is closed.
1. Can view it live from Google Home fine
2. It records events when I'm logged into the app and watching it.
3. I have nest aware, I know this because I have recordings of other days (when I had the app open)
4. I have zones set in place but it doesn't matter, it's the same with them off.

We've had a battery camera for over 3 years, plugged in with the optional power cable. It does better at detecting events during the day; at night it often does not detect events. However, because we have a Nest Aware Plus subscription, we get 24/7 recording even if the event is not detected.
If your battery camera is running on battery power, you should know that it is usually in "Idle" mode unless you are viewing the camera, or when the camera detects an event and "wakes up" from "Idle" mode to record that event. Our experience--and the experience of others in this forum--is that the camera is not so good at waking up to record events. If we unplug our camera and walk directly in front of the camera during the day, it usually does not detect that event.
So, that might explain what you are seeing. When you are viewing your camera in the Google Home app, it switches to "Live" mode, and so it ls likely to detect (and record) events at that time. When you are NOT viewing your camera, it is in "Idle" mode and has to "wake up" before it can record an event.

Thanks for the thoughtful writeup.
I have several battery powered Simplisafe cameras that turn on during events and records them.
All of them including the Google Nest Wireless are powered by solar.
If that is the case, then directed towards Google.. What would be the purpose of having the Google wireless Nest camera if it didn't wake up to record security events?
