I've tried things like
"OK Google, mute doorbell for 30 minutes" but it just does a google search.
Clearly none of the engineers for the doorbell have had children because there are a LOT of oversights with handling the doorbell chime.

Hi Brad, there's just no good solutions for people who have babies with a doorbell who want a Home Hub in the baby's nursery. You can turn on do not disturb and turn the media volume all the way down but that just eliminates a bunch of other features too. There's also no way to just silence the doorbell temporarily in the house with a voice command. You have to go deep in the app settings every single time you want to do that.

I also haven't found where you can silence the doorbell as part of a routine.
