How can I get a video for any activity captured with the doorbell. I get package and person videos but nothing else.

Is there a specific setup that I missed?

Under Settings | Events | Seen Events, you should be able to record People, Animals, Vehicle, and Motion events for 2nd gen cameras in the Google Home app.
