Are the photos in ambient mode taken by professional photographers?

Yes, by default they are. "Featured photos" are from Getty images and others, "Earth and space" are taken by NASA and from Google Earth. There is "Captured on Pixel" which is exactly what it sounds like. Photos taken on Pixel phones by Pixel owners, although they look just as good as a professional with a professional camera.
