No. Recording for Nest Aware subscriptions begins at the time when you purchased the subscription. That's probably why all the descriptions say things like "Up to 60 days..." (https://support.google.com/googlenest/answer/9681538)
The only way Google Nest could provide you with 60 days of video history as soon as you sign up would be if they were secretly keeping your video history without your permission, and that would be unethical if not illegal.
