Adding the new owner

So I’m moving house tomorrow and I want to see if I can just add the new owner to my account and then remove myself so that can then use it?

or is this not the way to do it?

Maybe, but don't. Just remove the device from your account and do a factory reset just before you leave. This will do 3 things. First it will negate cross conntanination with any of your google accounts. Two , by forcing them to set it up, they will get more familier with the product. Third is will start the smart schedule learning from scratch for them.
