My thermostat says it updated 18 hours ago and since then the WiFi won’t connect. Restarted router, restarted thermostat, tried manually connecting to WiFi, checked that battery has enough voltage. What do I do now?

Could you share with me the battery information on your Nest Thermostat? Another troubleshooting step I suggest you try is to activate your mobile hotspot and try to connect the network with your thermostat.
Also, you can try a Factory Reset and check if the situation is still there.
