I have a wine cellar in my basement and I'd love to be able to check the temp / get alerts in my Google home app rather than buy a 3rd party product with its own app.
Is it possible to set up a nest thermostat sensor purely to read the temperature but not have the nest thermostat try to adjust the temp? Ideal scenario, Id like to have an alert at a certain temperature too.

You could always buy a new/used thermostat, and just use that as a sensor. I have one in my conservatory where I can monitor the temperature, and an alert comes if a low reading shows.
