My Nest thermostat is not visible on my app. When I try to add it says it’s already on account, remove and re-add, but since it’s not visible there’s nothing to remove. My husband has it on his App, under his separate email account.

If your Nest thermostat is already on your husband's gmail account, that would explain why YOU are getting a message saying it's already on another account. Your husband should--in the Google Home app--go to Settings | Household and select the "Invite person" to invite you, using your gmail account, to give you access to the thermostat (and any other Google Nest devices).
