Nest Thermostat - heating water even without schedule set

Hello.  I had a new boiler, water tank, and Nest thermostat installed ago 18 month ago.  For most of this time we had a schedule configured for the hot water to come on a couple of times a day to top up the tank, which seemed to work well.  I could see the boiler coming on at the right times.  Life was good.

Recently we were on holiday for a few weeks.  Before I left, I cleared the hot water schedule completely.  No heating events in the calendar view whatsoever.  I did this so that we weren't wasting gas topping up a hot water tank that nobody was around to use.

A couple of weeks after we came home from our holiday, I realised I had not added any heating events back into the Nest thermostat's schedule.  But we were still using our hot water as normal.  We hadn't run out.

 

The only explanation is the Nest is heating our water of its own accord.  It's got me wondering how much 'additional' and unnecessary heating it does when we are at home.  And how can I prevent it using gas when I go away for 4 weeks in couple of month's time!

Any insight would be much appreciated!
