How can I get these supposedly “smart” thermostats to hold at 50 degrees without deleting the existing programming points? Will be gone all winter & don’t need to heat to 70 degrees for 4 months!

On the UK model at least, there's an eco temperature setting for use when in eco mode. It basically won't let the temperature go below a certain amount.
Open the Nest app, click the settings cog, and click on your thermostat. You should then hopefully see an eco temperatures setting towards the bottom.
Then all you need to do is put the thermostat in eco mode.

all well and good if it would STAY in eco mode
this is where a user manual would be a BIG help. All user "error" but for the first 5-6 days, every time I went into an individual thermostat (there are 3) to check if they were working it would return all 3 to program mode. I finally discovered that the "eco" switch is a on off, it will turn all on with a single push AND then turn all OFF with a second push. USER MANUAL!

@Don88203, it sounds like you're dealing with some frustration with your Nest Thermostats. Maintaining a lower temperature of 50 degrees without constantly resetting to program mode can be tricky.
Firstly, it's great that you found the "eco" switch, but it seems like the functionality isn't as straightforward as you'd like. Do you have the Nest Thermostat 2020 model with a mirror display finished? If so, here's your guide to holding the temperature on the Nest Thermostat.
For the Nest Learning Thermostat, disable learning for the temperature schedule, and the Home and Away Assist would help so it won't change the temperature unexpectedly and activate the system randomly switching to Eco mode.

Thanks for the info, now, is there a "users" manual for the nest thermostats? I have found a installation manual describing how to wire them? (don't need it)
The synopsis is 1: I am a general contractor, 2: wife & I have 6 furnished homes in 4 states, & 3: I have stayed away form "learning" thermostats as we have literally NO pattern in our lifestyle.
The first week of frustration with these was for lack of a user manual & trial and error on my part. (exacerbated by not seeing/reading the small print regarding eco mode ie: each time you click eco mode it does something different, turning on then off)
I've now got them all synced in eco mode & working but it would be nice to get them to recognize home/away which so far I haven't ben able to do, hence the need for a users manual with all available information in one place without having to go back and forth to google to research a control.
