How do I turn it off for a few days when I don't need it, and then back on when I do

One way is to use "Eco mode".  In "Settings", set the Eco temperature to be very low (or very high, if you're cooling rather than heating your house).  Then turn Eco mode on whenever you don't want action from your system.  (I think you can also literally turn the Nest off, but you'd have to check the online instructions for that.)
