I currently have a router provided by Three, who provided our sim-only broadband.
Would it be possible to set up Google Wifi without a wired internet connection?

Google/Nest WiFi requires a wired Ethernet connection to your internet service. If all you have is an existing WiFi connection, it might be possible to use a "travel router" in bridge mode to act as a WiFi client on that "outer" network and provide an Ethernet port a Google WiFi unit could connect to. I wouldn't expect a solution like this to be particularly high performance, but since Google WiFi can provide a larger coverage area, it might be useful if that's the problem you're trying to solve.
