I currently have a Google Nest network, consisting of a router and two points. I would like to stream audio on a device that requires an ethernet input. Can I add a second router into the existing mesh network?

There are several options here. First, the primary Nest WiFi Router unit has a "LAN" Ethernet port that you can connect wired devices to, and you can use that to build a wired local area network by using one or more Ethernet switches. But, if running Ethernet isn't feasible and the location of your primary Nest WiFi Router unit is not compatible with what you need to connect to Ethernet, then yes, the second option is to add either another Nest WiFi Router unit as a point (secondary), or add a (cheaper) Google WiFi unit as a point. Then you can use either (or both) of the Ethernet ports on those devices to connect nearby wired clients. You can even connect an inexpensive Ethernet switch to make even more ports available from there.

To clarify, I am asking if I can use the ethernet port on a second router as an output, not an input.

Yes you can, that's how I feed my home office with a better connection than using the laptop wireless NIC (piggybacking the backhaul).
