I've tested this on the mini Hubs as well as the Max with various bluetooth headphones and speakers paired as the default audio device.
The issue is identical across the board: audio is absurdly ahead of the video, to the point that it's unusable. This happens on every Hub, paired with every bluetooth audio device, using every video streaming service.
The internet seems oddly silent for something this badly broken. Is there a setting I'm missing?

No, the problem happens between Bluetooth headphones and a display. There is no group involved.

Thanks for clarifying. Have you already tried to unpair your Google Nest Hub from your headphones? Delays are normal especially when playing a video.
Speaker delays vary between different models.
The following are typical numbers for specific categories:
Note: The above numbers provide some common values. Some models' delays may be outside of the typical range.
