If someone rings my doorbell when I’m away I get the doorbell sound on my iPhone 11 but it buffers so i cant speak or send an instruction to the person at the door

I think that's about right.
Does your setup work while you are at home with the doorbell correctly?
For any smart doorbell to work you have to be able to connect to a very good signal. Your doorbell is at home with wifi - excellent, you are out and about with 3G/4G, the chances of a good signal when your bell rings is slim. I installed my doorbell 18 months ago, and have used it once! Even then the person had well gone, the delay is awful, even if you are connected to wifi elsewhere.

That’s what I thought , I did originally wonder if it was my mobile phone package a s I have the basic one with Sky

My nest hello door bell has stopped working even when I am home when someone presses the button. My phone and Camera are both on WiFi with excellent signal strength, but when someone presses the button, camera goes off line. This is the Wired door bell I installed in 2018. Many in the forum are seeing the same issue. No response from Google/nest.
