We have the nest doorbell with camera, and when you ring the doorbell all devices set off an alert, we have a Google mini in our babies room for smart light, and to play white noise. 

Is there anyway we can the doorbell to not send an alert to that particular google mini, I don't want it to wake the baby.

Hi TerriSoph,  Many many people on this forum have asked this very same question in the past 4+ months.  The answer sadly is NO, Google does not give us a way to stop the doorbell from ringing on just 1 device.   However, what you can do is turn OFF the notifications on that Google mini in the baby's room. However, that turns off ALL notifications on that device.
