I’m paying monthly for the history to save our video door bell recordings and it only saves for 3 hours. Please help me fix this issue.

Perhaps your Nest Aware subscription is not for the same Google Nest "home/structure" as the one where your cameras are located.
If you go to this page and click on your subscription, it will show the name of the Google Nest "home/structure":
https://store.google.com/subscriptions
If you check your doorbell in the Google Nest app or Google Home app (depending on your doorbell), does it show your subscription?
