My Google Nest hub stopped interacting; it just recognizes a question has been made but it just answers with a search result and the followin sentence:
"I don’t know but here are some results from search".
It never returns automatically to home screen, instead the main Googe search page remains on screen.

It turned out that if I set the Assistant language to English (US) as described here
https://support.google.com/googlenest/answer/7550584 (Change Google Assistant's language)
and ask questions in English, it works fine.
If I go back to my language (Italian) it fails as described.
So the problem persists.

Yep, I just had a twitter DM chat with the nest support account @madebygoogle (very friendly). They also advised me to change the language to EN-US. My original language was German, but I will keep it in English for the time being.
Anyway, they seem to be looking into the issue.

After a few days during them it was switched off, I have switched my hub on and now it seems to be working fine also in Italian, apparently for no reason. No more search results.

Since the day I've posted my note above, everything's fine here. Not sure why, but ok.

Hello albamain,
It's good to know that all is fine now since your last post. We'll be locking the thread in the next 24 hours, but if you still need help, I would be happy to keep it open. If there's more we can do, just let me know.
Thanks,
