It depends what you mean by "turn off". Do you want to remove only some of the set points in the schedule, leaving others? Do you want to override the scheduled temperature, temporarily or permanently? Do you want to have no schedule at all, but just one constant temperature all the time? Do you want to control the temperature manually, as if it weren't even a programmable thermostat? Do you want to turn the thermostat off, so that it never tells your AC to run? Sorry; I'm not sure exactly what you want it to do.
