Leaving my Florida home for 7 months. I want to set the humidity so that it doesn’t get too humid. How do I do that ? Do I use Eco? Will that control the humidity?

You would use Cool to Dry mode for this. Your thermostat will then use your AC or heat pump to control the humidity. You can turn Cool to Dry on or off on your thermostat or with the Nest app.
Learn about Cool to Dry - Google Nest Help
Note this only works with your AC or a heat pump, not standalone humidifiers or dehumidifiers. You also need the Nest Learning Thermostat or Nest Thermostat E, not the newer Nest Thermostat model that's managed in the Home app.
